Chablis Laid Bare:
2015 Dauvissat Chablis 1er Cru Les Vaillons

Posted by Ian McFadden

When Dauvissat's Vaillons hits the mark, it's an amazing bottle of Chablis.

It might not be the grandest expression, but its mineral focus is really thrilling.

Out of Dauvissat's lineup, Vaillons is one of the sites that shines the most in warmer vintages like 2015.

Dauvissat's 2015 1er Cru Vaillons delivers a serious mineral punch. You get an energizing current of saline and crushed rock minerality. This sets an exciting backdrop for the wines penetrating palate presence.

For us, Vaillons is one of the unheralded bottles in his lineup. It's a wine for purists. Chablis' minerality and tension is laid bare with only minimal adornment.

The 2015 1er Cru Vaillons stands out as a really impressive example of the wine. For that reason, I jumped on this parcel of 2015 Vaillons. I wish it were larger, but I'm happy to have snagged whatever I could.

Burghound: "A cool, pure and overtly spicy, green apple and floral-suffused nose that offers good Chablis character leads to rich, concentrated and relatively powerful middle weight flavors while delivering fine length on the dry and saline-inflected finale. This reasonably precise and well-balanced effort should be capable of rewarding 5 to 8 years of cellaring while being sufficiently forward to be approached in its youth. Recommended."
