Particularly as summer swelters on, the Brut Rosé presents a very sexy, very sophisticated sort of refreshment: a pale-coppery pink, soaring with floral perfume and bright red strawberries, anchored by clean, chalky minerals and a fine mousse. It’s no coincidence that the word “delicious” comes up in a lot of tasting notes for the Billecart-Salmon Rosé.
On top of that, there deserves to be a note about the wine's versatility. Aside from its sheer refreshment factor, there’s also the option of pairing this with fresh grilled fish, cold salads full of summer produce or even just a bowl of potato chips and the back patio (quite possibly our top choice). If you happen to have a couple bottles left when fall makes its way to us, they’ll have no problem standing up to heartier fare and even dishes with a little bit of heat.
Billecart-Salmon puts forth a whole line of Champagnes known and respected for their clarity and poise, often even a distinct sense of delicacy. But the wines aren’t meek: They’re also full, deep and sexy. The Brut Rosé, the “signature” Billecart-Salmon bottling (even as they make a number of other top cuvées) embodies this perfectly.
Billecart-Salmon’s freshness and clarity come thanks to the long cold soak the house employs pre-fermentation. Fermentation, too, is at low temperatures, allowing the wines to take their time and pull out nuanced aromatics.
As for the fullness, the more sensual component of the wines, Peter Liem explains in his profile of the domaine that the cuvée is 40% Chardonnay, which “is sourced not only from the Côte des Blancs but from other areas such as Vitry-le-François, Rilly-la-Montagne and Verzenay, in order to provide a little more body and roundness.”
The recipe has made this wildly popular - even one of the most iconic rosé Champagnes under $100. That factor also means that our parcel definitely won’t stick around long - especially at this pricing.
