As you well know by now, 2007 Chablis was, in the words of the Burghound, "aggressively classic" and "old school," surging with currents of acid and enough rocks to refill a quarry. These are thrilling, rigid-spined Chablis, ideal bottles for laying down.
And yet, almost ironically, part of what we so love about Raveneau's 07 Forêts is its surprisingly ripe, juicy flourishes of fruit that come across as unexpected for the vintage yet altogether irresistible, especially when overlapped with the wine's crunchy chalkiness and sturdy, clayey base.
The Forêts site - one of the top Premier Crus of Chablis, especially in Raveneau's hands - is part of Montmains, with more clay in the soils and a slope perpendicular to that of the Grands and Premiers Crus across the Serein river. It yielded the ripest grapes of the 2007 vintage, says Bernard Raveneau, lending the wine its gorgeous suppleness on the mid-palate, its "round but muscled and punchy" aspect, as Meadows calls it.
There's an extra layer of honeyed fruit, floral depth and complexity here that, when fused with the vintage's signature buzzing acidity, enhances, plays up and complements rather than overwhelms or disguises the stony minerals.
This is fascinating, impeccably balanced and serious stuff - another example of why Raveneau has a reputation as the valedictorian of Chablis, passionately focused on only the most superior fruit which, in turn and under such careful winemaking, can't help but transform into superior wines - Grands, Premiers or otherwise.
While the 07 Forêts is certainly dense, powerful and packed with enough acidity (classic Raveneau) to stand at attention for another decade, we can't blame anyone who wants to relish this right now. The pricing on this bottle is such that you can have your cake and eat it, too - hide a few bottles in your cellar and keep a few out for present enjoyment.

2007 Raveneau Chablis 1er Cru Forêts
Burghound: An expressive nose of honey, lemon peel and grapefruit merges into pure, round but muscled and punchy flavors brimming with Chablis character and culminating in a soil-driven, stony and delicious finish. This is actually a bit more refined than usual though it can't match the best 1ers here in that regard. It's also relatively approachable because of the mid-palate fat, which makes it somewhat atypical in the context of the vintage.
