Michael Collins Cocktails: (Recipes etc.)

We'll be enjoying Michael Collins tomorrow in the following three ways (choose any for yourself, or perhaps all three, depending on the time of day):

Michael Collins Single Malt, Neat
Simply pour the whiskey into an old-fashioned glass and enjoy the pleasing aroma of sweet hay, honey, and citrus. The complex palate gives way to subtle smokiness from the peat, which is followed but not overpowered by the spirit's alcoholic warmth. You may prefer your whiskey with some water or a few ice cubes, but I'd encourage you to try it straight first. (As stated, I opened a bottle after dinner on Saturday night for a mixed group of whiskey-drinkers and not, and the ten of us polished it off before ice, water, or any mixers were produced.)

Coole Collins Irish Coffee
Pour 1-2 oz of Michael Collins in a clear mug or wine glass and add about six ounces of hot brewed coffee. Then pour Irish Cream (we prefer Coole Swan, available at Crush for $28.99) over the back of a spoon so that it floats on top of the coffee. This last step may seem finicky but is essential for the tactile sensation of this classic drink. As noted spirits authority Michael Jackson suggests, "If you fail, don't serve the drink to your guests, knock it back quickly yourself, and try again."

Michael Collins
For a long drink, combine 1.5 ounces whiskey, the juice of half a lemon, and a teaspoon of sugar or simple syrup (or, as a variation, St Germain Elderflower Liqueur) in a Collins glass. Fill the glass with ice and top with club soda.
